Origin: Machecoul, Loire-Atlantique, France
This unique cheese from south of the Loire is distinguished by its walnut liqueur-washed rind, which imparts a distinctive nutty complexity. Made from raw cow's milk and aged in humid caves for up to two months, Brun de Noix develops a beautiful brown exterior from regular brushing with walnut liqueur. The paste beneath is creamy and supple, offering earthy, nutty flavours that intensify towards the rind. Each wheel represents the perfect marriage of traditional cheesemaking and the Loire Valley's renowned walnut heritage.
The walnut liqueur washing creates more than just flavour - it encourages specific bacteria that contribute to the cheese's complex taste profile and distinctive aroma, whilst the raw milk provides depth and terroir.
Remove from refrigeration 30 minutes before serving. The liqueur-washed rind is edible and adds wonderful depth. Pairs beautifully with fresh walnuts, pears and honey. Excellent melted in gratins or with roasted root vegetables.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
