Our Legado Ibérico pork cheeks are a prized cut from free-range Ibérico pigs raised in the dehesa woodlands of Extremadura. These compact, well-marbled morsels represent the perfect marriage of lean meat and rich intramuscular fat that slowly renders during cooking to create an extraordinarily tender, flavourful delicacy with the distinctive nutty character that comes from the pigs' acorn-rich diet.

The cheeks are among the most flavourful cuts of the Ibérico pig, offering exceptional taste with minimal effort. Slow-braise in red wine with aromatics until fork-tender (approximately 2-3 hours at 150°C). The cheeks will absorb the cooking liquid while developing a luxurious, melt-in-the-mouth texture.
