Don Bocarte Anchovies


'Don Bocarte' produced from the Bay of Biscay and are highly regarded as the world's best anchovies.

The period for catching the top-quality young sardines on the Bay of Biscay is April, May and June, which is when 'Don Bocarte' purchases this highly-prized fish.

They carry out the salting process as quickly as possible, ensuring that the anchovy only takes on the necessary amount of salt essential for its preservation. The fish are arranged in barrels in a fan-like way, placing a layer of salt between each level.

The anchovies are pressed to remove fat so that they can begin maturing. In their maturing cellars, the fish are left to age for a minimum of 8 months, during which time the temperature and humidity are controlled in order to achieve the characteristic aromas of the 'Don Bocarte' anchovies.

Once the salted fish has obtained its characteristic bouquet and aromas, the anchovy is the cleaned by hand. It is then taken to the filleting room where their highly-skilled staff finish off the process by leaving the anchovies completely clean, revealing their best appearance and texture.

All orders received before 3pm can be dispatched the same day unless a specific future date is selected using the date picker on the basket page of our website.  We do not deliver on Sunday or Monday.


We send all of our shipments on an express overnight courier service, usually with DPD.  We have a perishable account giving our parcels priority in their network.  Should you not be at home at the time of delivery, the driver will try to find a safe place to leave your parcel and send you a notification.  However, we do always encourage you to be in to receive your goods to ensure there is no risk of theft, for which we do not accept liability. 

If your residence opens directly onto a pavement or you have a shared access it may not be possible for your driver to find a safe place in the event that you are out, in this case your parcel will return to the depot and one more delivery will be attempted the following day.  After two unsuccessful delivery attempts, due to the perishable nature of the contents your parcel will be disposed of.


On the day of your delivery you will receive a notification with your one hour time slot via SMS and email.

For the shipping fresh and frozen goods we use high quality mixed recyclable insulated packaging to keep your products perfect through the courier network.

To keep frozen goods at the correct temperature we use a safe alternative to dry ice.  These gel packs freeze to a temperature of -45° and stay frozen for an extended period of time. Completely food safe and fully recyclable/reusable.


The vast majority of shipments arrive frozen but we cannot guarantee this.  In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in your freezer.  Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.

All frozen products arrive in extremely high quality, fully insulated packaging.


All fresh truffles are sent in a foil resealable pack with an absorbent paper.  This is suitable for storing in your fridge.  If storing truffles for more than a few days we recommend wrapping them in paper towel or using a Tuberpac.  Fresh truffles are always best consumed as soon as possible.
