Ferme des Peupliers yoghurts with fruit compote — a pack of six individual pots from a Norman dairy farm that has been making yoghurts for over 55 years. The milk is whole, from the farm's own herd, pasteurised but not homogenised or standardised. This matters: unhomogenised milk retains its natural fat structure and produces a yoghurt with a denser, more set texture and a richer flavour than the thin, uniform yoghurts made from processed milk.
Each pot is 125g and contains a firm set yoghurt with a layer of fruit compote. The pack includes a mix of flavours: strawberry, blackcurrant, cherry, raspberry, pear, lemon, vanilla and wild fruits (please note each pack contains only 6 of these flavours and there is slight variation from portion to portion). The fruit preparation is made with 50% fruit — a reasonable proportion — with sugar, concentrated fruit juice, and pectin. These are not sugar-free or austere health-food yoghurts; they are proper French dairy-counter yoghurts with a fruit layer that is sweet, recognisably fruity, and made to be enjoyed as a dessert or a snack.
The yoghurt itself is firm-set — it holds its shape when spooned — with a clean lactic tang and the richness of full-fat Norman milk. The texture is somewhere between a set yoghurt and a crème, denser than anything you will find in the chilled aisle at a UK supermarket.
