Available seasonally from June when the cherries reach perfect ripeness.

The Rhône Valley's Mediterranean climate and traditional growing methods create cherries with excellent sweetness balanced by refreshing acidity, delivering the authentic taste of French summer fruit at its peak.

Best eaten at room temperature rather than straight from the fridge — pull them out 20–30 minutes before serving to let the sweetness and fragrance come through fully. Their firm texture makes them one of the better cherry varieties for cooking, as they hold their shape under heat rather than collapsing into mush.

For a simple dessert, halve, stone, and roast at 200°C for 10–12 minutes with a little butter and a spoonful of honey until just softened and caramelised at the edges. Serve over vanilla ice cream or alongside fresh ricotta. They also work well poached whole in a light syrup with a strip of lemon zest and a few black peppercorns — the firmness means they keep their form and look elegant on the plate.

Raw, they pair naturally with soft cheeses, almonds, dark chocolate, and cured meats — particularly Ibérico ham, where the sweetness of the cherry cuts through the salt and fat. For salads, halve and toss with watercress, toasted hazelnuts, and a sherry vinaigrette.
