The paleta is the shoulder cut of the Ibérico pig — a different joint from the rear leg that produces the jamón. It is cured for a shorter period — 22 months compared to 42 for the jamón — and has its own distinct character: rich, flavourful, and intensely nutty, but with a slightly milder intensity and a different fat distribution that makes it a versatile and approachable way into the world of premium Ibérico cured meats.Juan Pedro Domecq is a family-owned company with roots stretching back to 1730. After years of genetic studies conducted in collaboration with Spanish universities, the family selected the lampiño-mamellado Ibérico pig — an almost extinct variety considered the finest breed for producing Ibérico ham due to its exceptional ability to convert acorns into richly marbled, intensely flavoured fat. The pigs roam free in the dehesa (oak forests) for at least 21 months, feeding on acorns during the montanera season. The paletas are naturally cured in Domecq's own cellars in the Jabugo area under the constant care of their master ham-maker. Domecq maintains a deliberately limited production each year, an approach that has earned them three stars at the Great Taste Awards four years in a row.

Located in the heart of Jabugo, the company controls all stages of production, from breeding and rearing their exclusive 100% pure Ibérico pigs to curing and slicing. Their commitment to sustainable practices and the preservation of the dehesa ecosystem defines everything they do.

Ingredients: 100% Ibérico acorn-fed shoulder ham (98%), common salt (2%), sugar (<0.1%), preservative E-252 (potassium nitrate), antioxidant E-301 (sodium ascorbate), acidity regulator E-331iii (trisodium citrate)

Storage: Refrigerate. Once opened, consume within 2–3 days for best quality. Remove from the fridge 15–20 minutes before serving to bring to room temperature.
