Tasting: Light golden with jade reflections. Aromatic bouquet of white flowers, lemon zest and kumquat, with hints of white peach and brioche. Fresh, delicate attack with silky texture revealing Pinot Noir's power and structure. Long finish with distinctive mineral salinity.
Pairing: Perfect with Ōra King Salmon, Carabineros prawns and Sturia Oscietra Caviar. Complements Chilean Sea Bass and Tiger Prawns beautifully.
Producer: Founded in 1906 by René Lallier in the Grand Cru village of Aÿ, this prestigious house combines traditional techniques with modern precision. Under cellar master Dominique Demarville's expert guidance, Lallier operates from historic cellars in Aÿ and modern facilities in Oger. The estate sources grapes from over 50 crus across Champagne's finest terroirs, crafting wines that express four signature atmospheres: Freshness, Purity, Depth, and Intensity.
Vintage: The 2020 vintage completes an exceptional trilogy following 2018 and 2019. An unusually warm spring led to the earliest harvest on record starting 17th August. Despite summer heatwaves affecting yields, the dry, sunny conditions produced grapes of remarkable quality with perfect balance between sugar and acidity, creating what many consider one of the finest vintages of the century.
