Robust hard cheese made from unpasteurised cow's milk, combining the best characteristics of traditional West Country Cheddar with the sweet, nutty notes of Alpine cheese. Aged for 14-16 months, this award-winning cheese develops deep, complex flavour profile with distinctive natural rind and firm, crystalline texture that showcases exceptional British artisan cheesemaking.

The flavour balances sweet and savoury notes perfectly, offering hints of toasted nuts, caramel, and grassy undertones with a long finish that evolves on the palate. The extended aging process creates the characteristic crystalline texture whilst developing the complex flavours that have made this cheese a standout example of modern British cheese innovation rooted in traditional methods.

Serve at room temperature on cheeseboards or incorporate into cooking for added depth. Perfect grated over pasta, melted in toasties, or enjoyed with crisp apple and wholemeal crackers.

Producer: Made by Simon Jones on his family farm near Alford, Lincolnshire. The cheese is produced using milk from their own herd of Holstein-Friesian cows, grazing on land that has been farmed by the family since 1917, ensuring complete control over quality from pasture to cheese.
