FRESH LOBSTER MUSHROOMS
Lobster mushrooms are gnarled, contorted fungi, averaging 15-20 centimetres in diameter, and have an irregular shape with little to no stem and a cracked cap.
The surface of the cap is textured, firm, and mottled, ranging in colour from white to a vibrant orange-red, with split, wavy edges. When sliced, the flesh is white, dense, and spongy with a faint, seafood-like aroma. Lobster mushrooms have a firm texture with a subtly nutty, woody, and delicate flavour.
The mushrooms retain their firm texture after cooking and can be added to pasta dishes, mixed into chowders and soups, cooked in cream-based sauces, or added to stews and terrines. They can also be incorporated into risotto, seafood, omelettes, and stir-fries. It is important to note that the red-orange colouring will bleed when heated, creating a rich hue, especially in rice-based dishes.
To clean, the fungi should be dry brushed to prevent the bright colouring from being removed.

Time-Sensitive & Event Orders
Can we guarantee delivery on a specific day? Unfortunately not - we rely on third-party couriers and can't control their schedules. All items leave us in perfect condition with good use-by dates, but final timing depends on the courier.
If your order is for a specific event, let us know in the notes section at checkout. We can often dispatch a day earlier to give you the best chance of timely arrival.

Once dispatched, your package is with the courier and we're unable to redirect it or change delivery details.
Saturday Delivery
Saturday delivery is available, though please note our couriers don't operate phone support at weekends and our office is closed. For event-critical orders, a weekday delivery gives us more flexibility to help if any issues arise.
