Tasting: The iconic 2012 Proprietary Red Opus One is aged 18 months in French oak. A classy, complex, suave and savoury 2012 Opus One, with notes of toasty oak and crème de cassis. This Pauillac lookalike, made by the staff at Mouton Rothschild, is a beauty. They have continued to strengthen the quality of wine and seem to have produced a brilliant, world-class wine. 2012 is one of their great ones, with a seamless integration of acidity, tannin, alcohol and wood all present in this beautiful, full-bodied wine that should drink well for 25-30 years..
Pairing: This noble Napa wine pairs masterfully with A5 Japanese Wagyu, pan-seared Sashi Beef, or Westholme Wagyu tenderloin. The wine's structure complements dishes featuring wild Ceps or Morels. For cheese, serve with aged Fort Saint Antoine Comté or Truffle Pecorino. Black truffle creates an outstanding winter accompaniment.
Producer: Opus One, founded in 1979 as a collaboration between Robert Mondavi and Baron Philippe de Rothschild, represents the marriage of Napa Valley terroir with Bordeaux tradition. The estate's 169 acres of vineyards in Oakville benefit from the region's exceptional climate and soils. Their meticulous approach includes hand-harvesting at night, grape-by-grape sorting, and ageing in new French oak. Each vintage reflects both the character of Napa Valley and the refinement of Bordeaux winemaking philosophy.
