Also known as Hedgehog mushrooms, these prized wild fungi are foraged from the French woodlands. Their dense, meaty texture and sweet, nutty flavour make them a cherished ingredient among mushroom enthusiasts and chefs alike.

These cream-coloured mushrooms are celebrated for their firm texture and distinctive tooth-like underside. Their robust nature holds up well in cooking, while their delicate flavour adds depth to any dish without overpowering other ingredients.

Sauté in butter over medium heat for 5-7 minutes until golden. Their sweet flavour works beautifully in risottos, cream-based pasta dishes, or served on toasted sourdough.
