A grain-fed Black Angus sirloin steak from Stockyard Beef — Australia's most awarded beef brand, produced at the Kerwee Feedlot on the Darling Downs in Queensland. The sirloin sits along the back of the animal, behind the ribs, and is a leaner cut than the ribeye with a tighter, finer grain and a clean strip of fat along one edge. It offers a balance of tenderness and flavour that makes it one of the most popular steak cuts: more beefy character than a fillet, less richness than a ribeye, and an excellent fat-to-lean ratio that suits most preferences.
Stockyard is a family-owned business, now in its third generation under the Hart family, operating from Australia's longest-running feedlot under single ownership. Their Angus cattle are sourced from dedicated breeders across Queensland, New South Wales, and Victoria, then grain-finished for over 200 days at Kerwee. All cattle are MSA graded, and the feedlot has been named Most Outstanding MSA Beef Producer — Feedlot for Queensland six times in a row.
The 200+ day grain programme produces a sirloin with more intramuscular fat than you would find in a grass-fed equivalent — the marbling is even and well-distributed, which keeps the steak juicy during cooking and adds a sweetness to the flavour. The fat cap along the edge renders during searing to add further richness.
The beef is IQF frozen.
