Blue Belly Shrimp are indescribably good, so sweet and moreish.
The best way to prepare them is to simply bring a large pan of water to the boil and add a teaspoon of sea salt. Add the shrimp and boil for 1-2 minutes until they start floating to the top.
Remove them and plunge into a large bowl of iced water to cool. Drain and refrigerate until ready to serve. In our opinion, the perfect accompaniment would be nothing more than fresh bread and Au Bon salted butter.
