They are committed to producing roes only from live salmon, which they milk by hand each year in May. Their exceptional purity, texture, and flavour have set a new standard for salmon roe.
Their farms are located in the pristine Yarra Valley Ranges of Victoria, and they are strong advocates of sustainable growing practices. Their chemical-free environment, large earthen ponds, and gravity-fed freshwater source are integral to producing Australia's best hand-milked salmon pearls.
The First Harvest Salmon Caviar is a celebration of the first ever spawning of their young female salmon. The result is a softer, more palatable pearl that melts in your mouth and accentuates the taste buds with a crisp, salty burst of flavour.
This product is a result of aquaculture and is harvested from live fish. It is BAP certified.
We receive this product frozen to ensure it stays in the best possible condition and will thaw it out before sending it to you. The shelf life is 90 days after thawing, and the tins will be dated accordingly. The product should be kept refrigerated and once opened used within 4 days.

Our Delivery Service
We use reliable third-party express courier services and high-quality insulated packaging. While our couriers are generally excellent, occasional delays can happen. We pack everything to stay fresh, even if transit takes a little longer.
Time-Sensitive & Event Orders
Can we guarantee delivery on a specific day? Unfortunately not - we rely on third-party couriers and can't control their schedules. All items leave us in perfect condition with good use-by dates, but final timing depends on the courier.
If your order is for a specific event, let us know in the notes section at checkout. We can often dispatch a day earlier to give you the best chance of timely arrival.

Saturday Delivery
Saturday delivery is available, though please note our couriers don't operate phone support at weekends and our office is closed. For event-critical orders, a weekday delivery gives us more flexibility to help if any issues arise.
