Arrabiata — literally "angry" in Italian — is a fiery tomato sauce from Lazio, built on garlic, chilli, and a handful of herbs. This blend brings all of those components together in dried form: tomato, garlic, chilli, basil, thyme, rosemary, oregano, and marjoram. The idea is simple. Fry the blend in olive oil to release the aromatics, add tinned tomatoes, and simmer. The result is a punchy, well-seasoned sauce with genuine depth — far better than anything from a jar, and ready in about 15 minutes.
Beyond classic arrabiata on penne or rigatoni, the blend works well as a base seasoning for any tomato-led dish. Use it in pizza sauce, shakshuka, a quick ragu, or stirred into a pan of braised peppers and aubergine. It also makes a good dry rub for chicken or lamb when mixed with olive oil and a pinch of salt before grilling. The balance of herbs and chilli gives it enough heat to be interesting without overwhelming the other flavours.
Producer: Terre Exotique, a French spice house founded in 1998 after its founder discovered Penja pepper on a plantation in Cameroon. The company sources directly from growers worldwide and processes at its facility in France, maintaining close relationships with producers to ensure traceability and quality across its range.
