Baby red beetroot picked at an early stage of growth, when the natural sugars are at their most concentrated and the flesh is uniformly tender throughout. These are not simply small beetroot — they are a distinct harvest, pulled before the root develops the dense, fibrous texture and sometimes muddy flavour that larger specimens can carry.

The vivid crimson colour comes from betanin, a pigment in the betalain family that is highly water-soluble — which is why beetroot bleeds so readily when cut or cooked. Roasting rather than boiling helps preserve both the colour and the sweetness, as the sugars caramelise on the surface rather than leaching into cooking water.

The skin is fine enough that peeling is unnecessary. Roasted whole, the exterior caramelises while the interior stays soft and sweet.
