Penja pepper is grown in the Moungo province of Cameroon, near the city of Penja, in soils of volcanic origin that give the pepper its distinctive aromatic profile. In 2014 it became the first product from the African continent to receive Protected Geographical Indication (PGI) status — a recognition of both its unique terroir and the traditional methods used to produce it.
The pepper is harvested green and sun-dried over several days. As the moisture evaporates, the grains darken, wrinkle, and develop the characteristic black peppercorn appearance. The dried peppercorns are then sorted grain by grain by hand. The result is a pepper with aromas of camphor, incense, and leather, and a palate that delivers acidic, biting heat with a tannic depth reminiscent of red wine.
