Wild garlic — also known as bear's garlic or ramsons (Allium ursinum) — is one of the defining flavours of European spring, carpeting woodlands from March through May with its distinctive, pungent green scent. The season is short, and once it flowers the leaves lose their punch. This dried, chopped version solves that problem neatly, preserving the sweet, gently spicy character of the fresh leaves in a form that keeps for months and is ready to use at any time of year.

The flavour is milder and sweeter than conventional garlic, with a green, almost herbaceous quality that makes it more versatile than you might expect. It works wherever you would use fresh wild garlic: stirred into risottos, folded through pasta, scattered over soups, mixed into soft cheese or cream cheese, blended into compound butter, or added to tarts and quiches. It also makes an excellent finishing touch for scrambled eggs, omelettes, and baked potatoes. A small pinch rehydrates quickly in any dish with moisture, releasing its flavour within a minute or two of contact with heat or liquid.

Producer: Terre Exotique, a French spice house founded in 1998 after its founder discovered Penja pepper on a plantation in Cameroon. The company sources directly from growers worldwide and processes at its facility in France, maintaining close relationships with producers to ensure traceability and quality across its range.
