The paleta is the shoulder cut of the Ibérico pig — a different joint from the rear leg that produces the jamón, and one with its own distinct character. It is slightly less marbled than the jamón but still of exceptionally high quality, with a rich, full flavour and a milder intensity that makes it a versatile choice for a wider range of occasions. Where Cinco Jotas jamón is a statement — intense, complex, commanding the plate — the paleta is its more approachable counterpart. It carries the same acorn-fed pedigree, the same Jabugo curing cellars, and the same 100% Ibérico breeding, but the shoulder's different muscle structure and shorter curing time produce a ham that is slightly sweeter, slightly leaner, and slightly more restrained.
This does not make it a lesser product. The paleta has a loyal following among Spanish ham enthusiasts who value its balance and versatility. It works beautifully on its own, as part of a charcuterie board, alongside cheese, or wrapped around breadsticks, melon, or figs. Its milder character also makes it an excellent introduction to Ibérico ham for anyone who has not tasted it before.

Storage: Refrigerate. Once opened, consume within 2–3 days for best quality. Remove from the fridge 15–20 minutes before serving to bring to room temperature.
