Delicias Doña Natalia quince paste — membrillo — from Andalusia. Quince (Cydonia oblonga) cooked slowly with sugar until the natural pectin sets the mixture into a firm, sliceable paste. The colour is a deep amber-orange, the texture is smooth and dense, and the flavour is concentrated quince: sweet, gently tart, fragrant, with a warmth that sits somewhere between apple and pear but is distinct from both.

Membrillo is one of the essential cheese board accompaniments in Spain — the combination of quince paste with Manchego is a classic that exists for good reason, and it works just as well with the hard sheep's and goat's cheeses, the blues, and the aged cow's milk cheeses in the FINE & WILD range. The sweetness and the slight acidity of the quince cut through the richness and salt of the cheese, and the firm texture means it slices cleanly alongside a wedge of cheese rather than running or dripping.

This is a 240g block — enough for several cheese boards. Once opened, it keeps well in the fridge.
