Don Bocarte extra large Cantabrian anchovies — hand-filleted anchovy fillets from the Bay of Biscay, packed in organic extra virgin olive oil. Eight fillets per tin, 100g. These are from a numbered limited series of 8,000 tins.
Don Bocarte is based in Santoña, on the Cantabrian coast — the traditional centre of Spanish anchovy production. The anchovies are caught in the Bay of Biscay between April and June, when the fish are at their best. They are salted immediately in barrels, layered with salt in a fan pattern, then pressed to remove fat and left to mature in temperature- and humidity-controlled cellars for a minimum of eight months. After curing, each fillet is cleaned and filleted by hand before being packed in organic extra virgin olive oil.
The result is a large, meaty fillet — deep brown-pink in colour, silky in texture, with a clean, intense anchovy flavour that is savoury and rich but not aggressively salty. These are a different product entirely from the thin, sharp, vinegary anchovy fillets sold in supermarkets. Eat them straight from the tin on good bread, or use them wherever a premium anchovy fillet makes a difference — on a board with cheese and olives, draped over roasted peppers, in a salad Niçoise, or melted into a sauce.

Storage: Store in a cool, dry place. Once opened, refrigerate and use within a few days. Keep the remaining fillets submerged in oil.
