Cornichons are small gherkins, picked young and graded by size — extra-fine are the smallest, prized for staying crisp and snapping cleanly when bitten. Sharp and tart from the vinegar, with a firm crunch that holds up against rich food. Serve drained, straight from the jar, with charcuterie, pâté, terrines, raclette and cold meats, or chop them into a sauce gribiche, tartare or rémoulade. Keep refrigerated once opened.
Producer Établissements Fallot, in Beaune, is the last independent, family-owned mustard house in Burgundy, founded in 1840 and recognised as an Entreprise du Patrimoine Vivant. Its condiment range extends beyond mustard to cornichons, capers and vinegars.
