Capers are the unopened flower buds of the caper bush, picked young and graded by size — and these are the smallest grade, known as lilliput, or non pareilles in French. Firm and tightly furled, they carry a sharp, briny tang and a clean, concentrated flavour. Drain and scatter over fish, salads or a tartare, or warm them through in a sauce; once opened, keep refrigerated and topped up with their liquor.
Producer: Établissements Fallot, in Beaune, is the last independent, family-owned mustard house in Burgundy, founded in 1840 and recognised as an Entreprise du Patrimoine Vivant. Its condiment range extends beyond mustard to capers, cornichons and vinegars.
