This is not a generic mixed peppercorn blend. Each of the five components has been selected as a "Grand Cru" — a term borrowed from wine to indicate the highest grade of its type — and the combination is designed to deliver a range of flavours, colours, and heat levels that no single pepper can achieve alone.
The blend brings together white Penja pepper from Cameroon (powerful, woody, with menthol notes), black Penja pepper from Cameroon (rich, aromatic, full-bodied), Jamaican allspice from Guatemala (warm, sweet, with clove and cinnamon undertones), freeze-dried green pepper from Madagascar (fresh, herbaceous, bright), and pink berries from Madagascar (fruity, delicate, mildly sweet). The result is a peppercorn mix that works across a wider range of dishes than any single variety — the hot and sweet notes balance each other, the colours are striking in a clear mill, and the aromatic complexity builds with each grind.
Producer: Terre Exotique, a French spice house founded in 1998 after its founder discovered Penja pepper on a plantation in Cameroon. The company sources directly from growers worldwide and processes at its facility in France, maintaining close relationships with producers to ensure traceability and quality across its range.
