Raised to maturity weight of 180-220kg when the meat reaches its highest succulence, delivering real depth of flavour alongside melting tenderness.
This impressive rack showcases the distinctive characteristics of Ibaiama pork: darker colour than conventional pork, smooth-grained texture, and beautiful marbling throughout. Only three farms rear this breed under stringent husbandry requirements controlled by an independent governing body. Fed a strict cereal-based diet with no GMOs or antibiotics, these pigs develop the exceptional meat quality that makes Ibaiama so prized.
