Juan Pedro Domecq is a name that predates most of Spain's celebrated ham producers by a considerable margin. The Domecq family arrived in Spain in 1730 — a surname closely associated with the production of high-quality foods and wines, including sherry and brandies — and began breeding 100% Ibérico pigs on their Lo Álvaro farm in Seville in 1970. What sets Domecq apart is the breed itself. After years of genetic studies conducted in collaboration with Spanish universities, the family selected the lampiño-mamellado Ibérico pig — an almost extinct variety characterised by small, hairless, dark-skinned animals with thin legs, considered the finest breed for producing Ibérico ham due to its exceptional ability to convert acorns into richly marbled, intensely flavoured fat.

The pigs roam free in the dehesa (oak forests) for at least 21 months, feeding on acorns during the montanera season. The hams are then naturally cured in Domecq's own cellars in the Jabugo area for 42 months under the constant care of their master ham-maker. The result is a ham with a stunning flavour — sweet, nutty, and umami-rich — a beautiful aroma, and a tender, not-too-fatty texture. The slices in this pack are hand-carved to ensure the perfect thickness so they melt in the mouth. Domecq maintains a deliberately limited production each year to ensure only the finest products reach the market — an approach that has earned them three stars at the Great Taste Awards four years in a row.

Ingredients: 100% Ibérico acorn-fed ham (98%), common salt (2%), sugar (<0.1%), preservative E-252 (potassium nitrate), antioxidant E-301 (sodium ascorbate), acidity regulator E-331iii (trisodium citrate)

Storage: Refrigerate. Once opened, consume within 2–3 days for best quality. Remove from the fridge 15–20 minutes before serving to bring to room temperature.
