Our Legado Ibérico pork presa is an exquisite cut from free-range Ibérico pigs raised in the dehesa woodlands of Extremadura. This prized shoulder cut, known for its exceptional tenderness and rich marbling, showcases the perfect balance of lean meat and intramuscular fat. The marbling renders beautifully during cooking, creating an incredibly succulent piece with the distinctive nutty character that comes from the pigs' acorn-rich diet.
The presa is considered one of the finest cuts from the Ibérico pig, offering extraordinary flavour with remarkable tenderness. Its natural marbling and perfect fat distribution make it incredibly forgiving to cook, while the heritage Ibérico breed's unique diet creates meat with a higher proportion of healthy monounsaturated fats and an unparalleled depth of flavour that sets it apart from conventional pork.
Sear quickly over high heat on an open flame or hot pan for 2-3 minutes per side, allowing the natural marbling to render and create a beautiful caramelised crust while keeping the interior tender and juicy. The presa's exceptional marbling means it cooks rapidly and benefits from being served medium-rare to medium. Rest briefly before slicing against the grain. Serve simply with coarse sea salt, a drizzle of good olive oil, and perhaps a squeeze of lemon to let the pure Ibérico flavour shine.

If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
