LEGADO IBERICO PORK RACK

Our Legado Ibérico pork rack represents the pinnacle of Spanish pork, featuring a magnificent crown of ribs from free-range Ibérico pigs raised in the dehesa woodlands of Extremadura. This spectacular cut combines the succulent loin with the flavourful rib bones, offering exquisite marbling, a deep ruby-red colour, and the distinctive nutty aroma that only acorn-fed Ibérico pork can provide.

The Ibérico breed's unique genetics and diet of acorns during the montanera season create meat with extraordinary intramuscular fat, yielding an incomparable buttery texture and rich, complex flavour profile. This heritage pork contains higher levels of oleic acid (similar to olive oil), resulting in a melt-in-the-mouth experience that far surpasses conventional pork.

Roast whole in a hot oven (190°C) until the internal temperature reaches 63°C for medium doneness. Allow to rest for 10-15 minutes before carving between the ribs. For a simple preparation that honours the quality, season only with flaky sea salt and perhaps a light drizzle of Spanish olive oil after cooking. Alternatively, use the bone as a guide to cut individual chops and portion two per person.
