Our Lumina Lamb rumps are premium cuts from New Zealand's revolutionary farming programme, where lambs graze on a specially developed herb-rich diet. These carefully trimmed rumps offer the perfect combination of a tender, juicy eye of meat with a protective cap of fat that bastes the meat during cooking, resulting in an exceptionally succulent cut with the distinctive sweet, clean flavour that makes Lumina lamb world-renowned.
Lumina represents the future of lamb production, with animals raised on pastures containing chicory, plantain, and other herbs that naturally enhance the meat's flavour profile and texture. The rump is prized for its ideal balance of lean meat and fat, delivering a more intense flavour than the loin while maintaining exceptional tenderness. This cut showcases the unique characteristics of herb-fed lamb at its finest.
For perfect results, sear the fat side in a hot pan until golden, then roast at 180°C for 12-15 minutes until medium-rare (internal temperature of 55-57°C). Rest for at least 10 minutes before slicing against the grain. The rump's robust flavour pairs beautifully with Mediterranean herbs like rosemary and garlic, or try it with a mint and anchovy butter for a contemporary twist.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
