Australia has a reputation for producing clean, green, and safe beef, and the quality of beef is second to none. The national traceability system works in conjunction with the national standard for animal health, welfare, and biosecurity to ensure best practices of animal husbandry and low-stress stock handling.
'Born wild, raised on native grasses'
Westholme cattle are born wild and raised on some of Australia’s most iconic cattle stations. The cattle came to Australia from Japan more than two decades ago. Their lineage traces back to the mighty Westholme herd founded on champion Wagyu bulls and cows, and the vast pastures of Mitchell grass nourish the cattle where they roam free.
The steaks are cut here in the UK and then rapidly frozen to -28° in a matter of minutes. This process offers two major advantages, one being zero food waste and the other helping to keep the meat in amazing condition. Red meat naturally discolours after a few hours so blast freezing is the ultimate way to keep the steak as fresh as it is when first cut.
Cooking test results with MEATER®
Tomahawk size: 1.3kg, probe placed in the thickest part of the steak that had been out of the fridge for 20 minutes. The probe will pick this up in any case.
Cooking Method: We used a Webber compact BBQ, simple but effective, high-quality charcoal briquettes from The Green Olive. The briquettes were lit and covered the base of one-half of the BBQ only. The tomahawk was seasoned well with salt and placed on the half of the BBQ with no briquettes underneath, lid down, the steak was turned every 5 minutes.
The internal temp of the BBQ was approx 220°c, and the MEATER probe was set to take the steak off at medium-rare to medium 55°c (better with ribeye cuts to develop the flavour and cook internal fat more).
Time: Cook time was 49 minutes with a further rest time of 13 Minutes.
Result: The steak was well caramelised and perfectly cooked, very slightly towards medium than medium-rare, which in this case is perfect for a sharing cut such as this, offering different levels of doneness to suit all.
The tomahawk is a mighty cut and will feed at least three people. Due to its depth of flavour and richness, it could even feed 4.

Orders placed before 2 PM (Monday to Friday) are eligible for same-day dispatch, unless you choose a specific future delivery date during checkout.
We use reliable third-party express courier services and high-quality insulated packaging. However, delays can occur, so we package items to ensure they remain in excellent condition.
If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.

Delivery slots are limited. Early booking is strongly recommended.
ORDERS CONTAINING FROZEN PRODUCTS ONLY
If you have space to store them, please request your order to be delivered as soon as possible, or choosing delivery before December 20th. We reserve the right to change your delivery date up to to 2 days prior if we feel it runs the risk of not arriving to you promptly.
FRESH TRUFFLES
Your truffles will be harvested as close to Christmas as possible to offer the longest shelf life and the freshest product. We fly them in from Europe early each morning on the same days we send them to you.
Last available Pre-Christmas delivery is 23rd December and the truffles will be good for a minimum of 6 days, any longer may impact your enjoyment - PLEASE notify us via email if you need them for the exact delivery day you requested or consider receiving them a day earlier, if that date is available.
As always with fresh truffles they are best eaten as soon as possible to enjoy maximum aroma.
FRESH PRODUCTS
All fresh products are supplied with a use by date beyond 28/12/24, with the inclusion of fresh mushrooms and fresh truffles. We aim for delivery no later than the 23rd of December
WAGYU STEAK / FROZEN PRODUCTS ONLY/ DRY GOODS
All of our frozen products have a long shelf life in the freezer or at least 5 days if defrosted. Orders containing only frozen products will be delivered no later than 20th of December.
You can order certain products (subject to availability) for delivery on 30/12/24
White truffles will not be available for delivery between Christmas & New Years Eve, Instead please order fresh black truffles.
