The lobster shells come from the pristine cold waters of Norway, where the clean environment gives these shellfish their world-renowned quality. The stock is reduced by two-thirds to create an intensely flavoured base that transforms into rich bisques, elegant sauces, and sophisticated pasta and risotto dishes. Each batch follows traditional recipes developed with leading Norwegian chefs to ensure authentic, restaurant-quality results.
