These carefully trimmed rumps offer the perfect combination of a tender, juicy eye of meat with a protective cap of fat that bastes the meat during cooking, resulting in an exceptionally succulent cut with the distinctive sweet, clean flavour that makes Lumina lamb world-renowned.

For perfect results, sear the fat side in a hot pan until golden, then roast at 180°C for 12-15 minutes until medium-rare (internal temperature of 55-57°C). Rest for at least 10 minutes before slicing against the grain. The rump's robust flavour pairs beautifully with Mediterranean herbs like rosemary and garlic, or try it with a mint and anchovy butter for a contemporary twist.
