Miguel Vergara Bone-In Sirloin
Cut from cattle grain-fed for 300 days before slaughter and aged for 21 days. The bone-in cut provides flavour during cooking. The meat has intramuscular fat that contributes to texture and taste. Cattle are raised under welfare standards designed to support marbling and meat quality.
Cooking Instructions
Bring to room temperature. Season with sea salt and pepper. Sear in a hot pan to develop a crust, then finish in a 180°C oven until internal temperature reaches 52-55°C for medium-rare. Rest for 10 minutes before slicing against the grain.

IQF Frozen: The meat is cut in the UK then rapidly frozen to -28°C within minutes. This process preserves quality and reduces waste. As red meat naturally discolours hours after butchering, blast freezing maintains the appearance and condition of freshly cut meat.
