This distinctive French hard cheese undergoes an impressive ageing process that transforms it from a simple pressed cheese into a complex, deeply flavoured delicacy. The characteristic bright orange paste develops a firm, granular texture with occasional crystalline formations that indicate proper maturation. The natural grey rind, created by beneficial cheese mites during the lengthy ageing process, protects the interior whilst contributing to the cheese's unique character.
The extended maturation develops intense butterscotch and hazelnut flavours with a satisfying caramel finish. The firm texture and concentrated taste make each morsel incredibly satisfying, whilst the natural ageing process creates complex layers of flavour that evolve on the palate.
Serve in thin shavings with a sharp knife to appreciate the dense texture. Excellent grated over salads or pasta, or enjoyed with crusty bread and a drizzle of honey. The intense flavour pairs beautifully with fresh pears and walnuts on a cheese board.
Producer: Produced in Northern France using traditional methods, this Mimolette is carefully aged for 18 months in controlled conditions, allowing the natural cheese mites to develop the characteristic rind whilst the paste matures to perfection.

We use reliable third-party express courier services and high-quality insulated packaging. However, delays can occur, so we package items to ensure they remain in excellent condition.
If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
