NEW GUINEA VANILLA PODS 8g
Cultivated in the lush regions of Papua New Guinea, this variety of vanilla offers exotic and spicy aromas with hints of caramel, wood, and tropical fruits. Papua New Guinean vanilla pods are infused with these rich and captivating aromas, originating from the fertile lands and tropical climate of the region. Only a few tons of this vanilla are produced yearly.
It comes from Vanilla planifolia plants, an orchid whose cultivation requires constant attention and delicacy. It is a creeper that leans on a living tutor. It flowers only three years after planting, and it is necessary to wait eight months for the pod to ripen to harvest it. Its preparation is very tedious because it is entirely manual and requires a lot of rigour, patience and love. The pods are first scalded, parboiled, sun-dried for two weeks, flattened by hand, and refined before being graded and packaged in bundles.
Its fruity and woody aromas go wonderfully with a dish of fine-fleshed fish and white meat accompanied by a creamy sauce, homemade madeleines, French toast, cookies, a white butter sauce, and a paste for macaroons. You can cut the pods in half and infuse them in milk to make flan or sugar.
This vanilla, selected by Terre Exotique, comes from a high-quality culture. Depending on the country, they only choose “Gourmet” or “TK” label pods. The vanilla pods must be oily, plump, fleshy, full-bodied, and black or dark brown. Preparing a good quality pod takes between 6 and 12 months, and then at least 90 days.
Use a sharp knife to cut the pods in half lengthwise. Split the pods in half and scrape out the seeds.
Before opening, the tube should be kept in a cool, dry place. Once opened, we recommend you keep your vanilla in the fridge to stop it from drying out.
