Carnaroli is often referred to as the "king of risotto rice" and with good reason. While arborio is the more widely known variety, carnaroli is the one that Italian chefs reach for when precision matters. Its grains are slightly longer and firmer than arborio, with a higher amylose content — the type of starch that keeps the grain compact and resistant to overcooking. This means carnaroli holds its shape and bite even when stirred vigorously or cooked a minute too long, giving the cook significantly more control over the finished result. At the same time, it releases enough starch to produce a risotto that is every bit as creamy as one made with arborio — often more so.
This organic carnaroli is grown by Cascina Belvedere in the province of Vercelli in Piedmont, one of the most celebrated rice-growing regions in the world. The family has been cultivating and processing rice here since 1935, controlling every stage from seed to packaging. The rice is farmed using certified organic methods, processed in small batches to preserve nutritional content and flavour, and vacuum-packed for freshness. The traditional stone husking and meticulous selection process ensure consistent quality. For anyone serious about making risotto at home, carnaroli is the upgrade from arborio — more consistent, more forgiving, and with a better final texture.
