Single-estate organic extra virgin olive oil from the Tabernas Desert of Almería, produced exclusively from early harvest Hojiblanca olives grown at Finca El Vicario. This limited production oil showcases the exceptional quality that comes from 100% monovarietal Hojiblanca olives, harvested during the first 15 days of November when 60-70% of the fruit is still green, capturing maximum flavour intensity and nutritional value.
The early harvest timing creates an oil with intense gold colour and green hues, delivering complex aromas of tomato, apple, and banana with subtle notes of almonds and mint. On the palate, it offers a soft entrance with vegetable notes of lettuce and almonds, perfectly balanced between bitterness and spiciness. The piquant finish appears late on the throat, characteristic of premium early harvest oils.
