Passe Crassane Pears - Premium French Winter Variety

Passe Crassane is a distinguished French pear variety with origins tracing back to Rouen in Normandy. These medium to large pears are immediately recognisable by their characteristic russeted, greenish-yellow skin that develops a beautiful patina during the ripening process. The thin, smooth skin gives way to flesh that is slightly coarse and grainy in texture with an attractive rosy blush, yet remains remarkably soft and juicy when properly ripened.

These exceptional pears offer a complex flavour profile that combines aromatic, fruity sweetness with a pleasant tartness and distinctive floral notes. This sophisticated balance makes them particularly appealing to those who appreciate nuanced fruit flavours that develop and intensify throughout the eating experience.

Unlike most pear varieties that are considered autumnal fruits, Passe Crassane is classified as a true 'winter' pear with a distinctive ripening process. Rather than ripening on the tree, these pears are carefully picked whilst still firm and then undergo a controlled ripening process throughout the winter months. To prevent dehydration through moisture loss via the stem, each pear stem is meticulously dipped in wax, creating a protective seal that maintains optimal moisture levels during the extended ripening period.

These versatile pears excel in various culinary applications, performing beautifully when baked, poached, or roasted, where their firm flesh holds its shape whilst developing rich, concentrated flavours.
