Black truffle juice from Plantin — the liquid extracted during the first boiling of extra quality winter black truffles (Tuber melanosporum). When fresh truffles are sterilised during Plantin's appertisation process, they lose 15–20% of their weight as juice. That juice carries the full aromatic profile of the truffle in concentrated liquid form. It is collected, preserved, and bottled on its own — slightly salty, intensely flavoured, and extraordinarily useful in the kitchen.
This is not a flavouring or an extract. It is the actual cooking liquid from real Périgord black truffles, with nothing added beyond water and salt. It is the simplest and most direct way to add genuine truffle depth to a dish without using fresh or preserved whole truffles. A spoonful into a sauce, a risotto base, or a vinaigrette changes the character of the whole dish.
Think of it as truffle stock. It works wherever you would use a good stock or reduction — as the liquid backbone of a sauce, stirred into a braise, whisked into a dressing, or reduced down to intensify the flavour further. It is also the base ingredient for making truffle butter and truffle mayonnaise at home.
