Bone-in, skin-on thighs from the Poulet Jaune de Vendée — the same corn-fed, Classe A Black Prestige birds sold whole and as breasts in the FINE & WILD range, portioned here as individual thighs. Dark meat is where the flavour concentrates in any chicken, and with a slow-grown, corn-fed bird like this, the difference is pronounced: rich, savoury, and naturally juicy, with the kind of depth that makes a thigh the preferred cut for anyone who cooks seriously.
The slow-growth programme and 100% vegetarian, corn-rich diet produce superior fat marbling through the thigh meat, which keeps it moist through almost any cooking method and develops a golden, crisp skin when roasted or pan-fried. The bone adds flavour and helps the meat retain its juiciness during cooking. No hormones, no antibiotics.
These thighs are the most forgiving cut in the FINE & WILD poultry range. They are almost impossible to overcook, they take well to high heat and to slow braises, and they work in everything from a simple tray bake to a full coq au vin. The IQF (individually quick-frozen) format means you can take out as many as you need and leave the rest in the freezer — no need to defrost the whole pack.
The birds are produced by a cooperative of farmers in the Vendée region under the Leon family's Black Prestige brand. Each thigh carries the Classe A certification, guaranteeing flawless presentation and optimal fat-to-meat ratio.
