Satay blend is a traditional Balinese spice blend used to prepare the famous satay or satay sauce used to marinate meat skewers. 

The brown sugar in this blend comes from partially refined sugar cane juice. It contains 5% molasses, which gives it its blond colour and subtle vanilla scent. After the harvest, the sugar cane is pressed to extract the juice. The latter is then heated to evaporate the water and concentrate the sugar, which will agglomerate and crystallize.

Galangal is related to ginger. It is a very aromatic rhizome with a ginger scent and a burning flavour. Its botanical name is Alpinia galanga. Its white and red flowers and fruits are small capsules containing the seeds. 

Satay is one of the most common dishes in Indonesia; you can find it everywhere. Its origin dates back to the 15th century when visiting Indian merchants are said to have created these skewers of grilled meat wrapped in spices. This is how the Indonesians discovered grilled meat! There are many variations of satay around the world. Each civilization adapts this dish according to its traditions.
