Five generations of Basque charcuterie from Maison Mayté, made entirely from Ibaïama pork — a breed raised to exacting local standards in the French Basque Country since 1877.

Maison Mayté has been producing artisan Basque charcuterie since 1877, working from the heart of the French Basque Country across five generations. All of their products are made from Ibaïama pork — a breed raised exclusively in the Basque Country to a minimum of 11 months and 180kg, benefiting from the region's exceptional climate: a combination of Atlantic salt air and Pyrenean mountain influence that is unique to this part of France.

This saucisson is made to a traditional recipe using coarsely ground Ibaïama pork seasoned with pepper, slow-cured in a natural casing. The result is a firm, well-structured saucisson with the depth of flavour characteristic of a long-established artisan producer working with high-quality, traceable pork.
