Tasting: This powerful Cabernet Sauvignon opens with compelling aromas of boysenberry, black cherry, mocha and black licorice. Rich and opulent on the palate with crushed mixed berry and spice flavours supported by ample yet plush tannins. The wine displays great presence and persistence, featuring freshly crushed red and black currants with nuances of roasted nuts, underbrush and truffles. Medium to full-bodied with a very firm frame of super ripe tannins, finishing on an epically long, lingering fragrant earth note.
Pairing: Exceptional with Sashi Beef or Stockyard Angus, where the wine's structured tannins complement rich marbling perfectly. Superb alongside Cinco Jotas Presa or Iberico Secreto. For poultry, pair with Guinea Fowl or Poulet de Bresse. The wine's depth makes it sublime with aged Fort Saint Antoine Comté or Parmigiano Reggiano.
Producer: Founded in 1970 by Warren Winiarski in Napa's Stags Leap District, Stag's Leap Wine Cellars achieved legendary status when their 1973 Cabernet Sauvignon won the 1976 Judgement of Paris. Cask 23, first produced in 1974 with André Tchelistcheff as consultant, represents their pinnacle expression, blending the most distinctive fruit from the S.L.V. and Fay vineyards. The wine embodies their philosophy of "an iron fist in a velvet glove" - richness balanced by elegant restraint.
Vintage: The 2016 growing season was near-perfect, marking the fifth consecutive year of exceptional quality in Napa Valley. Even temperatures throughout with no severe heat spikes, followed by a mild July and August, then warmer days at season's end allowed grapes to achieve perfect ripeness. Lower yields due to ongoing drought conditions concentrated flavours, whilst ideal September weather provided optimal hang time for complete maturation.
