A country terrine in the old style — à l'ancienne meaning coarsely cut and rustic rather than smooth, so it slices with texture and bite. Built on pork, with the deep, savoury richness of a traditional campagne recipe, seasoned and baked slowly in the mould, then served cold. The flavour is honest and full: salt, pepper, a little sweetness, and the gentle funk that good charcuterie should have. As it is made in the traditional style, there are no additives, no colourings, no artificial flavourings, only whole ingredients.
Serve it simply, the way it's meant to be eaten: thickly sliced at room temperature, with cornichons, a sharp mustard, pickled shallots and plenty of crusty baguette or sourdough. It belongs on any charcuterie board, makes a proper starter with a dressed handful of leaves, and is just as good pressed into a lunchtime sandwich. Keep refrigerated and bring to room temperature before serving to let the fat soften and the flavour open up.
