A professional truffle brush in beechwood, crafted by Sanelli Ambrogio. The bristles are set to the ideal hardness — firm enough to remove soil from the surface of a fresh truffle, soft enough not to damage the skin or puncture the delicate exterior. This is the tool for the job. A toothbrush is too harsh, a pastry brush too soft, and running a truffle under a tap without brushing first just moves the dirt around.
All fresh truffles supplied by FINE & WILD are lightly brushed but never thoroughly cleaned before dispatch. A thin layer of soil is left intact around the exterior to help preserve the truffle's shelf life during transit. Before use, brush the truffle gently — either dry or under cold running water — to remove the remaining soil, then pat dry with kitchen paper. The brush makes this quick and easy without wasting any of the truffle in the process.
