Urbani's natural truffle sauce — a cleaner, simpler recipe than their classic version. Champignon mushrooms and 8% summer truffle breakings (Tuber aestivum Vitt.) in extra virgin olive oil with garlic, lemon juice, and black pepper. No sepia ink, no flavourings, no thickeners, no emulsifiers. The ingredient list is short and straightforward, and the truffle flavour comes entirely from the 8% real summer truffle in the jar.

The texture is similar to the classic sauce — a rough, dark, spreadable paste with visible pieces of mushroom and truffle — but the flavour is cleaner and more direct. The lemon juice adds a brightness that the classic version does not have, which makes this sauce slightly more versatile as a finishing element where you want truffle without heaviness.

This sits between the classic £5 truffle sauce and the truffle paste in terms of intensity and purity. It has the convenience of a ready-to-use sauce with a shorter, more transparent ingredient list. This sauce is ready to use straight from the jar. Stir it into hot food and let the warmth release the truffle aroma.

Pasta: Cook your pasta, drain it, and stir through a generous teaspoon of sauce per person with a knob of butter or a drizzle of olive oil. Toss well. The cleaner flavour of this version makes it particularly good with fresh egg pasta where you want the truffle to come through without competing with other flavours.

Risotto: Stir a spoonful through a finished Parmesan risotto just before serving, off the heat. The lemon juice in this sauce gives the risotto a subtle lift that the classic version does not.

Crostini and bruschetta: Spread directly onto toasted bread. The cleaner profile means the truffle speaks more clearly here than the classic version.

Eggs: Fold a teaspoon through scrambled eggs just before they come off the heat, or spread a thin layer inside an omelette before folding.

Meat and fish: Spoon alongside grilled chicken, pan-fried fish, or a fillet steak. The lighter body and touch of lemon make this sauce slightly more suited to fish than the classic version.

Dressings and vinaigrettes: Stir half a teaspoon into a simple olive oil and lemon dressing for a truffle vinaigrette. The lemon juice already in the sauce means it integrates naturally.

How much to use: A teaspoon per person as a starting point. The 80g jar will serve 6–8 portions as a pasta sauce.
