A white truffle sauce from Urbani — champignon mushrooms and cream blended with bianchetto truffle (Tuber albidium Pico) and white truffle (Tuber magnatum Pico), finished with extra virgin olive oil, onion, white wine, and black pepper. This is a different product from Urbani's classic black truffle sauce — lighter, creamier, and built around the more pungent, garlicky character of white truffle rather than the earthy depth of black.
The texture is smooth and loose — closer to a cream sauce than a paste — with a pale colour that reflects the white truffle base. The flavour is delicate but distinctive: that characteristic white truffle sweetness and garlic edge, carried by the cream and mushroom body. It is more subtle than the black truffle sauce and needs to be treated differently — add it at the very end, off the heat, so the volatile white truffle aromatics are not cooked away.
The total truffle content is 4% — 3% bianchetto truffle and 1% white truffle (Tuber magnatum). The bianchetto provides the bulk of the truffle flavour at a more accessible price point, with the magnatum adding the top note. This is a realistic and honest approach to making a white truffle sauce that actually works at this jar size and price.
