Wrapped in spruce bark and presented in wooden box, this AOP-protected cheese develops complex roasted nut and cream flavours with subtle woodsy notes, becoming deliciously spoonable when perfectly ripe.

Seasonal treasure from the French-Swiss border, this soft-ripened cow's milk cheese is traditionally made between August and March when mountain pastures are at their finest. Each cheese is wrapped in spruce bark and presented in a wooden box, developing a rich, creamy texture that becomes deliciously spoonable when perfectly ripe. Made with raw milk from Montbéliarde cows grazing above 800 metres in the Jura Mountains.

The distinctive spruce bark wrapping imparts subtle woodsy notes to the cheese, whilst careful ageing develops complex flavours of roasted nuts and cream. The seasonal production ensures the milk captures the essence of high-altitude pastures when the cows graze on the diverse mountain flora that gives this cheese its exceptional character.

Best served at room temperature, allowing the creamy interior to reach its optimal consistency. For a traditional preparation, cut a cross in the top, add a splash of Vermouth or white wine with thyme and halved garlic clove, then bake at 180°C until molten. Serve with crusty bread, boiled potatoes, and charcuterie.
