Banana prawns (Penaeus merguiensis) are one of Australia's most commercially significant wild prawn species, harvested from the Gulf of Carpentaria in Queensland's far north. The Gulf is a large, relatively shallow sea with high productivity — conditions that produce prawns with a naturally sweet, clean flavour and firm texture. Karumba, the port town on the Gulf's southern shore, has been the centre of the northern prawn fishery for decades.
These prawns are wild-caught and IQF blast-frozen at sea to preserve their condition. Raw and shell-on, they arrive ready to prepare from frozen. The yield per kilogram is 25–30 prawns, indicating a generous, consistent size throughout.
