Guacamole traces its origins to the Aztecs and Toltecs of central Mexico — legend has it that the god Quetzalcoatl offered the recipe to the Toltec people. The dish has been a cornerstone of Mexican cuisine ever since, with each region, city, and family guarding its own version. UNESCO inscribed the traditional composition — avocado, chilli, coriander, onion, tomato, lime juice, and salt — on its Intangible Cultural Heritage list in 2010. This blend captures those essential flavour notes in dried form: onion and garlic provide the savoury base, cumin adds earthy warmth, paprika brings a smoky sweetness, coriander lifts the blend with its citrus-herbal freshness, and cayenne chilli delivers a clean, measured heat at the finish.

The simplicity is the point. Mix one teaspoon with a ripe avocado, half a diced tomato, and a squeeze of lime or lemon juice, and you have a properly seasoned guacamole in under a minute. But the blend is useful well beyond the dip. Sprinkle it over scrambled eggs, avocado toast, or a tomato salad. Stir into sour cream for a quick dip. Season chicken, prawns, or vegetables before grilling. Add to a tomato soup or a pan of fajita vegetables during cooking. The balance of sweet, smoky, and spicy makes it a versatile all-purpose Mexican seasoning.

Producer: Terre Exotique, a French spice house founded in 1998 after its founder discovered Penja pepper on a plantation in Cameroon. The company sources directly from growers worldwide and processes at its facility in France, maintaining close relationships with producers to ensure traceability and quality across its range.

For classic guacamole, mash a ripe avocado in a bowl. Add 1 teaspoon of the blend, half a diced tomato, and a squeeze of lime or lemon juice. Mix well and serve with tortilla chips, alongside tacos, or as a side for grilled meat or fish. Adjust the spice level by adding more or less of the blend to taste.

For a quick dip, stir a teaspoon into sour cream, crème fraîche, or Greek yoghurt. Excellent with crudités, tortilla chips, or alongside a barbecue spread.

For avocado toast, mash avocado onto toasted bread and sprinkle a pinch of the blend over the top with a drizzle of olive oil.

For seasoning meat or vegetables, use as a dry rub — sprinkle 1–2 teaspoons over chicken thighs, prawns, or sliced peppers and onions before grilling or pan-frying. The blend works especially well as a fajita seasoning.

For soups, stir a teaspoon into tomato soup, black bean soup, or corn chowder during cooking for a warm, smoky depth.
